The White Franc is a unique blend of Cabernet Franc and Sauvignon Blanc. The grapes were harvested manually and were selectively sorted when entered the winery.
The Cabernet Franc was pressed with the skins for a quick and light contact to reach a light color and to allow the typical varietal flavors to stay present in the wine.
Both varietals were fermented in a classic white wine fermentation at a temperature of 13◇c–14◇c. The Cabernet Franc fermentation was ceased at a high temperature to retain the wine’s delicate sweetness.
